Nigella Seeds (Black Seed)
Coming from the nigella flower, nigella seeds are crunchy and hard with a flavour reminiscent of toasted onions. In India they are dry-roasted and used on flatbreads like naan. They are an excellent seasoning for potatoes and root vegetables. Nigella seeds are used in Indian cuisines, particularly in mildly braised lamb dishes such as korma. It is also added to vegetable and dhal dishes as well as in chutneys. They are sometimes called black seed, kalonji or charmushka. They are also commonly but mistakenly called black cumin or black onion seeds.
